29-Day Giving Challenge

My husband is the most amazing cook. He can go to cabinets and a fridge, filled with next to nothing, and whip up an incredible meal. The first time he met my grandparents, my grandmother was horrified to discover that he did all the cooking. This was coming from a woman who spent 2 weeks preparing for Christmas dinner!! But I'm just not a comfortable cook. I can make the most basic of things and have 2 signature recipes that my husband loves (one being macaroni and cheese and the other egg salad!)

Yesterday was a very rainy and dreary day. I watch a baby for a friend most days starting at 6am. She called me in the morning to tell me that the baby wouldn't need to be watched until noon time. I cherished the extra hour of sleep I was able to get before rushing around to get my 6 year old ready and out the door for school. I sat down on the couch next to my 2 year old and finished reading the final pages of 29 Gifts. When I started reading the book I knew this was something that I wanted to partake in. By the time I got to the final pages, I didn't want to prolong my giving any longer. I dressed C quickly, grabbed my husband's most recent Home Cooking Magazine, and headed off to the grocery store.

When the magazine came in the mail this month my husband found a recipe that he couldn't wait to try. Roasted Eggplant and Chickpea Soup. He's talked about getting the ingredients a couple times this month but hasn't found the time to do so. By the time I got home from the grocery store I was so excited to start cooking, that I was peeling the eggplant & chopping the onions before putting away any of the other groceries.

My first attempt at roasting chickpeas did not go so well. I ended up burning most of them. (Luckily I bought I couple cans!) But by the time my husband arrived home from work, there was a wonderful aroma throughout the house.

Now came the true test. The food critic himself trying the soup. My husband (who really is wonderful) happens to be very judging when it comes to other people cooking. He always has suggestions. Lots and lots of suggestions. I had braced myself for his constructive criticism. I promised myself not to get upset because, after all, this was a gift. To my surprise he raved about it!!! I was so taken aback by his praise that I then did all the dishes and mopped the kitchen floor. (Usually in our household, the person that cooks doesn't have to help with the clean up!)

Several hours later last night, my husband let our dog outside. It was late so he didn't bother putting him on his leash, something that I constantly nag him for. Well our doggie saw a furry friend across the street that he really wanted to meet. Despite my husband's yells, our dog crossed the road to get sprayed by a skunk. When my husband came back into the house cursing and mumbling I immediately started to say (well, actually yell) "This is why I tell you to put the leash on the freaking dog." But I instantly shut my mouth. After all he had nothing but praise for my soup. So instead I grabbed the car keys, went out in the pouring rain, and headed back to the grocery store for baking soda, and hydrogen peroxide. And I mixed together shampoo for our very smelly pooch!!

Wow, your day 1 was jam-packed! You must have fallen into bed after your day ending with shampooing a skunky-dog! I am hoping day 2 is a little more calm,hehe.......
