Today's give was sweet, but not overly so.
One of the neighbors who lives in our little courtyard of houses has a whole brood of children. Often times on of the little ones will knock on the door and shyly hand over some organic veggie or fruit and then run away without saying a word. This morning an adorable little guy with crazy blond hair handed me a box of baby spinach. This was just too cute and a quickly decided that mt gift today would be for them.
Now I am a big believer in never throwing any food out, and we had some majolica dates in the fridge that needed to be used, so I set about to make a dish out of those for the brood. I quickly found a recipe that I was eager to try... Raw vegan "brownies"... though it was later decided that it turned out more like fudge.
They were perfectly delicious, after dinner I asked Katie and Stephen to take them over (being that they know them and I don't)... the best part of this whole story is that when they took the treat over one of the little ones who could have been more than 5 or 6 asked "are these gluten free?"... Why yes they were!!!
Here is the recipe should anyone like to make them...
You will need
1/2 cups raw almonds
1 cup raw cashews
8 pitted Majool dates
1/3 cup unsweetened cocoa powder
1 t vanilla extract
2 t water
1/4 cup dried cranberries
Milk substitute of choice (I used coconut milk, which gave it a great flavor)
Rough chop almonds in a food processor and put aside
Pulse cashews until fine and add cocoa powder...pulse
Add dried cranberries and pitted dates... pulse
Add water and vanilla extract.. pulse
Add "milk" until everything starts to come together...
Lastly mix in your rough chopped almonds.
Put in a pan and let sit in the refrigerator for at least 1 hour... will be chocolaty, sticky goodness with no dairy, no gluten, and no added sugar!!!
